Its inhabitants, all very attached to their history, have been able to conserve and preserve this exceptional natural site by perpetuating local customs and traditions through the centuries. In Crévoux, you’ll discover the human charm and warmth of an authentic mountain village. To warm up after a good day of skiing, don’t hesitate to explore a little of the local cuisine by tasting the Archican. This typical, ancestral dish from the Crévoux valley was traditionally cooked once a year as the families “killed the pig”, and features the Crévoux black turnip – endemic to the valley – with its very particular flavour (in fact, at one time, it was exported to Paris to be cooked in the capital’s great restaurants). At Parpaillon, the village’s hotel restaurant, Nicolas Chastan continues the tradition as he grows this turnip and offers the dish on his menu.
